     Garbanzo Bean Soup

Ingredients
2 (15 oz.) cans Garbanzo beans (chick peas) - drained and rinses
5 cups chicken broth
½ lb. chorizo sausage, sliced, casing removed
1 lb. ham or smoked sausage cubed or sliced
½ cup olive oil
½ medium green bell pepper, chopped
½ medium red green bell pepper, chopped
1 medium onion, chopped
2 medium potatoes, diced
 
1 cup celery, chopped finely
3 medium carrots, chopped
½ head cabbage, (optional)
3 cloves garlic, minced
1 small can tomato paste
½ tsp. Tabasco sauce, to taste
½ tsp. paprika, ½ tsp. dry mustard, ¾ T. ground cumin
2 bay leaves
Salt and pepper to taste

Instructions
Add oil to large pot. Heat to medium high and add onions, peppers, celery, chorizo, and ham (or sausage). Cook for 5 minutes, stirring. Add the spices and stir for 2-3 minutes and lt the flavors infuse. Add garlic, beans, broth, paste and Tabasco. Bring to slow boil and reduce heat to simmer for 30 minutes. Add carrots and cabbage; cook for 10 minutes. Add potatoes and cook another 12 minutes until the potatoes are tender.
