     Spinich Lasagna Alfredo

Ingredients
1 medium onion, diced
1 red or green bell pepper, diced
2 tablespoons olive oil
2 pounds cooked chicken breasts, diced
2 jars (16 ounces) Alfredo sauce
1/2 cup water
1 package (16 ounces) lasagna noodles, uncooked
1 can (27 ounces) or 2 cans 13.5 ounces Spinich, well drained
4 Cups shredded mozzarella cheese
 
4 tablespoons Italian seasoning

Instructions
Preheat oven to 375 F.
Saute onion and pepper in olive oil until tender. Place in large mixing bowl with diced chicken. Add pasta sauce and water to chicken mixture; mix well.
Place 1/2 cup mixture in the bottom of greased 13X9X2 inch baking dish. Top with 1 layer of uncooked lasagna noodles. Add 1/2 of the remaining mixture. Layer with 1/4 of the spinich, 1 cup mozzarella cheese, 1 tablespoon of italian seasoning and lasagna noodles. Repeat layers three times. Reserve and use 1/2 cup mozzarella as a topping on the final layer of noodles. Cover pan tightly with aluminum foil.
Bake for 1 1/2 hours. Remove foil and bake an additional 30 minutes or until cheese browns. Let stand for 15 minutes.
