     Lemon Coconut Cake

Ingredients
225ml Milk
5 tbsp Lemon Juice
350g Caster Sugar
Finely grated zest of 2 large lemons
100g Desiccated Coconut
300g Plain Flour
1½ tsp Baking Powder
½ tsp Bicarbonate of Soda
225g Butter
 
4 Eggs
For Filling-
100g Unsalted Butter
100g Icing Sugar
300g Soft Cheese
¼ tsp Vanilla Extract
1tbsp Lemon Juice
150g Lemon Curd

Instructions
1) Preheat the oven to 180oC (gas 4). 2) Grease and line three 20cm shallow cake tins 3) Put the milk and 1tbsp of lemon juice in a jug. Stir and leave to stand for at least 5minutes 4) Put the rest of the lemon juice in a pan with 75g of sugar and heat gently until the sugar disolves. 5) Remove from the heat and stir in the lemon zest and coconut. Set aside.
6) Stir together the flour, baking powder and bicarbonate of soda. 7) Cream the butter and rest of the sugar. Beat in the eggs one at a time. 8) Fold in the flour, milk and coconut mix. 9) Transfer the mixture into the 3 tins, level the tops and bake for 25 inutes or until the tops spring back when pressed. 10) Cool on a wire rack.
For the Filling- 1) Cream the butter and icing sugar then beat in the soft cheese, vanilla and lemon juice. 2) Sandwich te cakes with the lemon curd and two thirds of the filling. 3) Spread the rest on the top and decorate if desired.
