     Oreo Cookie Cake

Ingredients
12 Oreo cookies
2 c. - 2 T. all purpose flour
1 1/2 t. salt
1 t. baking soda
3/4 c. (1 1/2 sticks) butter melted, slighlty cooled
3/4 c. packed light brown sugar
1/3 c. granulated sugar
1 large egg
1 egg yolk
 
1 T. vanilla
11 oreo cookies, divided
1/2 c. (1 stick) butter, room temperature
2 T. - milk or cream
2 T. unsweetened cocoa powder
1/2 t. vanilla
1 1/2 c. powdered sugar
6 oreo cookies, halved

Instructions
For Cake, preheat oven to 350 degrees. Grease/spray a 9 in springform pan. Line bottom of pan with parchment paper. Spray parchment paper. Coarsely chop 11 oreo cookie into 6-8 pieces per coooie. Transfer these to a small bowl. (Leave fine crumbs out, discarding or using for buttter cream frosting). In a separate bowl whisk flour, salt and baking soda until combined.
In large bowl, beat butter, brown sugar and granulated sugar on medium-high speed until smooth and fluffy. Add egg, egg yold and vanilla. Mix until well incorporated. add dry ingredients and beat on low speed just until incorporated. Using a spatula, fold in oreos (reserve 3-5 for top of cake), making sure not to crush the oreos. Spred dough in prepared pan, then press reserved pieces on top.
Bake cake until lightly golden across the top and just firm to touch, 20-24 minutes (the middle will look soft, but it'll continue to set up as it cools). Transfer pan to a wire rack and let cool.
Buttercream frosting- In a food processor, pulse 5 oreos until find crumbs form. In large bowl, beat butter on medium-high speed until smooth. Add crushed oreos, milk, cocoa powder and vanilla until well combined (about 2 minutes). REduce mixer speed to low, gradually adding powdered sugar, a little at a time until incorporated. Increase mixer speed to high and continue to beat until fluffy about 1 minute more. Add additional milk and powdered sugar until desired consistency is reached. Remove cake from pan and place on a stand or cake plate. Pipe oreo buttercream in decorative mounds around the perimeter. Add additional decorating as desired. Cut remaining oreos in half. Using butter cream frosting, set halved oreos around perimeter of cake.
