     Beef Stroganoff

Ingredients
1/2 cup mushrooms (4 oz can is okay)
2 lbs round steak, cut into cubes of approx. 1/2 inch
1-2 cups tomato juice
garlic salt to taste
1 can cream of mushroom soup
1 cup sour cream (can substiture plain no fat yogurt)
1 tsp salt
1/4 tsp pepper
4 tbs margarine
 
Note- Suggest service over white rice - cooked separately

Instructions
Saute mushrooms in skillet in 2 tbs margarine Remove mushrooms from skillet and set aside
Put meat in skillet with 2 tbs margarine and brown Add 1 cup tomato juice and garlic
Cook slowly for approx 2 hours Stir occasionally Add more tomato juice as needed to keep moist
Add remaining ingredients and warm
Serving Suggestions
Serve over white rice
