90 g (4 slices) colby or tasty cheese finely chopped
1 tbsp egg mayonnaise
2-3 tsp dijon mustard to taste
4 slices wholemeal sandwich bread
2 eggs
1 1/3 cup milk
2 tbsp finely chopped chives or green onion tops
Instructions
Lightly butter a 20 cm square baking dish. Combine ham, cheese, mayo and mustard. Thickly fill bread with mixture to make two sandwiches. Quarter sandwiches diagonally. Arrange triangles in baking dish with crusts down and points upright.
Whisk eggs with milk and chives. Seasoned with black pepper. Pour mixture evenly over sandwiches. Allow bread to absorb all liquid (overnight possible).
Preheat oven to 160 or 140 FF. Bake for 30-34 mins or until puffed, golden and firm on the bottom. Cool for 5 mins. Serve hot.
