Separate bowl mix sour cream, chopped green onions,
cheddar cheese, 1/4 t. cumin, 1/4 t. cayenne, and
1/4 t. pepper. Add this sour cream mixture to ground
beef in a separate bowl.
Fry corn tortillas for 5 seconds on each side to
firm. Once fried, fill tortillas with sour cream
and ground beef mixture and roll.
Place in bake ware and cover with enchilada sauce.
Bake at 350 for 15-20 minutes.
