2 1/4 cups of plain flour

1/2 teaspoon of salt
|

1/4 teaspoon of ginger
|

2 teaspoon of cinnamon

1 cup of brown sugar
|

3/4 cup of caster sugar

3/4 cup of vegetable oil
|
|
1 cup of chopped walnuts / pecans
|
|
1 teaspoon baking soda
|
|
|

1 teaspoon baking powder
|
|
1 egg, lightly beaten
|
|
1 cup buttermilk
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |

In a large bowl add flour, salt, 1 teaspoon of cinnamon, ginger, both
sugars, vegetable oil.

Remove 3/4 cup of the batter. Add to it the nuts and remaining teaspoon
of cinnamon. Mix well, set aside to use as topping.

|
Add baking soda, baking powder, egg and buttermilk to the remaining
ingredients. Mix to combine all ingredients
|
|
|
Pour batter into a well greased 9 x 13 pan. Sprinkle the topping mixture
evenly over the surface. Bake at 350 degrees F for 40 minutes.
