2 C water
|
|
1/2 C sugar
|

2 medium sweet potatoes, peeled and cut into chunks

1/2 tsp salt
|

1/4 tsp pepper
|
|
1/4 C chopped roasted peanuts

Instructions |
|
|
In a large saucepan, bring water and sugar to a boil over high heat.
|
|
|
Add sweet potatoes and cover. Turn heat to low and simmer for 10 minutes, or until tender.
|
|
|
In a colander, drain sweet potatoes and place in a serving bowl. Add salt and pepper and stir. Sprinkle with peanuts and serve hot.
