In butter on med-low heat, saute peppers, onion, and carrot stips. (You might not be able to shred the whole carrot - use just as much as you can peel). Stir often.
When almost done, add frozen peas and snow peas and stir-fry until done. Sprinkle with salt and black pepper.
NOTE- I was just trying to use up some leftover tidbits and was surprised how good it was.

Serve in a bowl as a side-dish.
