Wash Pork Butt in cool water. Apply thin coat of mustard. Apply rub. Set in fridge overnight covered. Set out 1 hr before smoking. Smoke 2 hrs at 225 deg. Spray with apple juice hourly after that. Once butt reaches 145 deg. wrap in heavy foil, add splash of apple juice. Continue in smoke (or oven) at 225 until butt reaches 205. Remove (dont unwrap), wrap in towel and place in tight cooler for 2 hrs. Remove from cooler and open foil slightly for 20 mins. Break pork up into pan and add juices from foil.
