Put butter and olive oil in skillet. Add garlic clove and a little
salt. Cook for 1 to 2 minutes. Add mushrooms and cook for 3 to 4
minutes. Add leeks and lemon juice. Cook till leeks are soft and
translucent. Add 2 cups spinach. Immediately stir in cream and
broth. Simmer to reduce a little. Add parmesan cheese and serve.
