1 (8-oz.) package 1/3 less fat cream cheese, softened
1/2 cup nonfat plain yogurt
1/4 cup light mayonnaise
2 Tbsp. chopped fresh cilantro
1 1/2 tsp lime juice
1/2 tsp hot sauce
1/4 tsp salt
1/3 cup chopped jarred roasted red bell peppers
2 Tbsp. finely chopped green onion
Freswh Squash Chips
Instructions
Process First 7 ingredients in a food processor 30 to 45 seconds or until smooth, stopping to scrape down sides. Stir in red peppers and green onion. Cover ahd chill 1 hour. Serve with Fresh Squash Chips.
2 zucchini, cut into 1/4 inch thick rounds. 2 yellow squash, cut into 1/4 inch thick rounds, 1/4 tsp. salt.
Combine all ingredients and 4 cups cold water in a large bowl. Cover and chill 30 minutes; drain and pat dry with paper towels.
