2 cups chopped or coarsely grated apple, unpeeled (abt 4 med size)

1 cup sugar

1 egg, beaten
|

1/2 cup cooking oil
|
|
1 tsp vanilla extract
|

1 1/2 cup unsifted flour
|
|
1 scant tsp baking soda
|
|
1/2 tsp salt
|
|
1/2 tsp ground nutmeg

Instructions |

|
Blend sugar with apples and let stand 30 mins.
|
|
|
Add beaten egg, oil & vanilla to apple and sugar mixture. Add all dry ingredients and stir until well mixed.
|

|
Bake in preheated 350 degree oven in greased 8x8x2 inch pan or 7x11x2 inch pan for 35-40 mins.
