Cut bacon into small bits. Brown in a saucepan. Lift out bacon and reserve. Cook onions in bacon grease briefly. Lift out and add to bacon.

Chop beet greens to large pieces. Add to hot bacon grease with 1/4 cup water. Cover and steam for 2 minutes until just wilted.

Mix eggs, 1/4 cup water and 1/4 cup cream. Whip well. Pour into warm cast iron skillet prepared with a light film of olive oil. Cook 2 minutes on low heat.

Add bacon, onion, and beet greens layered into the eggs. Sprinkle with the parmesan cheese. Bake in 400 degree oven until eggs are solid. Move to broiler position in oven and broil until browned.
