Heat oil in large pot over medium heat. Stir in onion and pepper.
Cook for 8 minutes or until tender
Stir in curry powder, cumin, 1/4t salt; cook 2 mins. Add veg. broth
and sweet potatoes, bring to a boil. Reduce heat, cover, and simmer
until tender. (15 mins)
Remove 1 C of sweet potatoes and mash w/ fork. Stir mashed
potatoes back into pot, bring to boil. Reduce heat and boil gently
for 5 mins to allow mixture to thicken.
Stir in chickpeas, coconut milk, cilantro and pepper. Cook for 1 to 2
mins until warm. Stir in remaining salt.
