In dry skillet place 1 flour tortillas, On half place shredded cheese. When cheese BEGINS to melt, lay warmed chicken strips on top of cheese. Spoon a few spoonfulls of fresh Salsa over chicken. Fold in half when cheese becomes warm and bubbly and tortilla begins to brown. DO NOT OVERCOOK. You just want the tortillas crispy. Cut the Tortilla in 4 triangles and serve immediately with a dollop of sour cream and scoop of salsa. makes 1 serving at a time repeat as needed up to 4

Fresh Salsa Recipe
3 - 4 Red Ripe Plum tomatoes, 1/2 Red Spainish Onion, 1 small can chopped green chilis, 1/4 cup chopped Cilantro, 1 tsp of lime juice or vinager, 1 tsp salt (may add couple tsp chopped Jalapenos for extra heat) Mix all together and let sit a few to absorb flavors
