Preheat oven to 350. Place bananas in a large bowl and mash
with mixer. Stir in sugar and let stand for 15 minutes. Add
applesauce and eggs, mix well. Add remaining ingredients and
mix well.
Pour into loaf pan coated with non-stick spray. (I usually make
this in 4 small loaves so I can share!) Bake 30-45 minutes, or
until top is golden brown and a toothpick inserted into center of
loaf comes out clean.
Remove from oven and let stand 10 minutes before removing
from pan. Cool on wire rack.
