1 lb (20 oz) diced potatoes (pre-cooked)

1 medium red onion chopped

2 minced garlic cloves
|

1/2 cup of chicken broth
|

1/2 cup of white or apple cider vinegar
|
|
1 tsp dijon mustard
|
|
8 sliced of cooked and diced bacon
|
|
salt and pepper
|
|
|
|
2-3 tbsp chopped fresh parsley and dill
|

|

Instructions |
|
|
Melt butter and cook potatoes until brown and tender.
|

Add onion and garlic.
|
|
|
Mix broth, vinegar and mustard. Pour over potatoes.

Add bacon, salt, pepper, parsley and dill.
