Preheat the oven to 400 degrees. Coat an inch square baking dish with non-stick cooking spray. In a large bowl, combine sugar, baking powder, baking soda, cinnamon, and salt; mix well. Add the yogurt, bananas, oil, egg, and vanilla; mix until well blended, then spread into the baking dish, Bake for 22 to 25 minutes, or until golden and a wooden toothpick inserted in the center comes out clean. Let cool then cut into squares. (Can be served with a spoonful of Cool whip on top) (I used a 9x13 pan, as you see she left out what size pan)
