In a medium sauté pan, heat olive oil, then add garlic, shallots, onions and mixed bell peppers. Sauté mixture over medium to low heat until soft and caramelized approximately 6 to 10 minutes. Add corn bread and apple juice, combine until well mixed. Season with salt, white pepper and cumin to taste. Finish by adding cilantro and green onions.
