1 1/2 lb boneless pork loin cut into 1 inch pieces
1 1/4 pound red potatoes cut lengthwise into sixths
6 hot cherry peppers
Instructions
Marinate pork in 3tbsp oil with vinegar, basil, oregano, garlic and salt and pepper for 15 minutes
Cook pork in skillet with olive oil until browned. Remove.
Add potatoes to skillet with oil and peppers. Stir often until soften, about 5 minutes. Add half cup water and cover. Cook until water evaporates and potatoes are tender, about 15 minutes.
