2 lbs boneless beef chuck, trimmed of excess fat and cut into 1 1/2 in pieces
6 cloves garlic, finley chopped
1 to 2 jalapenos (seeded and slice)
1 large onion
2 Tbsp fresh lime juice- plus wedges for serving
1 Tbsp chili powder
Kosher salt
1/4 lb fresh green beans- thinly sliced crosswise
1 10oz. box couscous
1/2 cup fresh basil, sliced
Instructions
In slow cooker- combine beef, garlic, jalapenos, onion, lime juice, chili powder and 1/2 tsp kosher salt
Cook until beef is very tender, 7 to 8 hours on low or 4 to 5 hours on high
Stir in green beans, cover and cook for 3 minutes. Meanwhile cook couscous according to package directions. Spoon beef, veggies and sauce over couscous...sprinkle with basil, serve with limes wedges
