Preheat oven to 350f.
Pan seer beef in pan with olive oil. Good and brown on each side. Remove beef, throw in onion. then potatoe chunks. then carrots. Then celery. Put it all in the casserole dish. Deglaze pan with wine, add to beef and veggies.

put in oven. (Covered?) leave for an hour or so. Really depends on the size of the meat piece.

take it out. -) top with horseradish. add a dollop of sour cream when you plate the meal. I sliced the meat thin against the grain because I worried that it wouldn't be tender enough.

Since there is a step 4 space, here ya go- ENJOY. Put it in your mouth, chew and say yum.
Tweek the amounts to cover what your family likes and doesn't. Don't worry, I won't be offended! ;)
