Combine lemon juice and wine in a boiler and heat until it is reduced by a third. Add cream and salt and pepper and heat on medium until the mixture thickens.
Slowly add butter and stir until all ingredients are mixed well. Simmer on low for 5 minutes.
Serve with your favorite pasta dish or with fish or chicken.
