Combine Scrambled Eggs packet and water in a medium bowl and mix thoroughly.
Add EggBeaters, mix, and set aside.
Mash cauliflower with a fork and layer the bottom of a shallow microwaveable bowl.
In a separate bowl, combine tomatoes, onion, garlic, and basil.
Layer tomato on top of cauliflower, then layer zucchini.
Pour egg mixture evenly over vegetables.
Microwave for 5-6 minutes, or until set.
