½ cup whole-wheat pastry flour (stone-ground is ok)
1 Tbsp sugar (Stevia or Splenda is best)
1 ¼ cups buttermilk (lowfat)
1 tsp Baking Soda
4 Egg whites
1 tsp vanilla (can add another ½-1 tsp for more flavor)
Instructions
In a medium bowl, stir together the flour, whole-
wheat flour, and sugar. Make a well in the center
of the mixture.
In a small bowl, stir together the buttermilk, and
baking soda until dissolved, Stir in the egg whites
and vanilla until well combined. Add the buttermilk
mixture to the flour mixture and stir until
moistened.
Spray un heated griddle or large skillet with no-
stick spray. Heat the griddle or skillet over
medium heat. For each pancake, pour a scant ¼ cup
batter onto the hot griddle or skillet, spreading
the batter to about a 4” circle. Cook until the
pancakes are bubbly and slightly dry around the
edges. Then turn over and cook until golden brown
