Cook apples in 1/2 c. water until almost done. Add sugar, cinnamon and corn starch. Cook until thickend. Remove from heat and add vanilla. Allow to cool. Pour into unbaked pie crust.
Cream together remaining ingredients with fork and sprinkle over pie filling.
Bake at 400 degrees for 15 min. Reduce heat to 350 degrees. Bake 35-40 minutes until crust is brown and filling bubbles through topping.
