1/8 cup grated parmesan cheese (I used 18 grams of Kraft Cracked Black Pepper & Toasted Onion Parmes
1 Tbsp. Philadelphia Fat Free Cream Cheese
Salt and pepper to taste (I didn't use any salt and didn't miss it)
Instructions
Bring large pot of water to a boil. Wash and chop cauliflower into approximately 2 inch pieces. Peel and chop potatoes into approximately 1 inch pieces. Add cauliflower and potatoes to boiling water. Peel garlic and add to pot with cauliflower and potatoes. Cook until tender, approximately 10 minutes.
When both potatoes and cauliflower are tender, drain and place in food processor (or use immersion blender). Add Parmesan cheese, cream cheese, salt and pepper. Blend until smooth.
Makes 2 large servings
