1 onion, peeled and quartered
|
|
2 cups dry pinto beans, rinsed and soaked overnight-
|
|
1/2 fresh jalepeno or other hot pepper, seeded and chopped (opt.)
|
|
2 cloves garlic, minced
|
|
1-2 tsp salt
|
|
1/2 tsp black pepper
|
|
one big pinch cumin
|
|
6 cups water
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Combine all ingredients in slow cooker.
|
|
|
Cook on high for about 4-5 hours.
(-Double the cooking time if the beans have not been
soaked first.)
|
|
|
Remove the onion chunks and drain the excess liquid.
If desired, save excess liquid to add until the
final product is the desired consistency.
|
|
|
Mash the beans with a potato masher.
|
|
|

|
Optional- Top with shredded cheddar cheese, and/or fresh chopped green onions.
