Cut up all of the veggies and sautee them in a pan
with the olive oil and red wine vinegar.
While veggies are sauteeing, prepare pasta according
to the box directions. Drain and return to pot.
Continue sauteeing veggies until soft and then dump
that concoction into pot of pasta.
Mix it all up, put some on a plate and sprinkle the
fresh mozzerella cheese on top and eat!
