In a large bowl put 2 TBSP of salt and put cut up
chicken to soak in bowl for 30 minutes. While
soaking get 3 containers. One you will put
buttermilk and hot sauce to taste. The second you
will put flour, onion powder, garlic powder,
cayenne pepper, paprika, salt and pepper. Mix
those with fork. The third with the same flour
mixture again. Drain chicken after 30 minutes.
Dredge in flour then buttermilk then flour again.
Let dry for a few minutes on platter.
