Heat oil in deep pan then soften onion for 4-5mins. Stir in curry paste and cook for 1min more. Add sweet potato and stock, then bring to the boil. Simmer for 5 mins.
Remove from heat, stir in coconut then blend. Sprinkle with coriander then serve warm.
