Saute onion in a sprayed pan or with a little olive oil until transparent. Add soy crumbles and
garlic and cook 5 minutes.
Cut cabbage into quarters,remove the tough ribs, and cut into 1 inch strips. Add to pan with
zucchini, bell pepper, and mushrooms. Cook about 8 minutes until the cabbage wilts.
Add tomatoes, sugar, vinegar, and salt. Bring to a boil, cover, and simmer about 10 minutes
until cabbage is tender, stirring occasionally.
Serve over pasta or rice.
