4 (6 ounce) Salmon Filets (Alaskan Sockeye or King Salmon is the Best)
1/4 C. brown sugar
1/4 cup Bourbon (like Jim Beam)
1/4 cup soy sauce
1/4 cup vegetable oil
1/4 C. chopped green onions
Mango-Papya Salsa
Instructions
Arrange salmon in a single layer in a shallow dish. Combine the brown sugar, bourbon,
soy sauce, oil and green onions in a bowl and mix well.
Pour over the Salmon, turning to coat. marinate, covered, in refridgerator for 1 hour,
turning occasionally
Drain the salmon, reserve the marinade. Place the salmon in a grilling basket. Grill
over hot coals for 7 minutes per side or until the salmon flakes easily, turning once and
basting with the reserved marinade several times. Serve hot or cold with mango-
Papaya Salsa.
Mango-Papaya Salsa makes a great accompaniment for the bourbon-basted salmon.
Thirty minutes before serving mix 3/4 cup chopped mango, 3/4 cup chopped papaya,
3/4 cup fresh pineapple chunks, 3/4 cup coarsely chopped fresh mint and 1 finely
minced seeded jalapeno chile. Or Buy the nummy Mango salsa at Costco!!!
