|
Brown Onions and shallots in butter in large skillet. Adding a little sugar makes them caramelize better.

|
Add minced garlic 1/2 thru. Add spices and stock. Simmer for 30 minutes. Add wine and simmer for another 30 minutes.

|
Purée it in blender BE CAREFUL - HOT and put it back in the pot.
|
|
|
Add cream and serve with blue cheese
|
