Cut up cauliflower and steam/boil until soft. While the cauliflower is cooking, fry the bacon. Then chop the onion up fairly fine, including the green portion. Mince the garlic.
When the cauliflower is done, drain in colander. Add butter and cream cheese. Mash cauliflower until creamy. Add bacon, onion, garlic, salt, pepper and half of cheese. Mix well and pour into casserole dish. Top with remaining 1/2 cup cheese.
Bake at 350 degrees for 20-30 minutes, or until the top begins to brown.
You can add some xanthum gum to the cauliflower as you mash it -- to stiffen them a bit more.
