1 lb of fresh tomatoes,chopped in blender or 14 oz can tomatoes
1 onion
1 sweet pepper red, orange, yellow or green
plenty of garlic
corn
Any or all of the following veggies-
potatoes eggplant
spinach, add at the very end kale
carrots jalepeño
All spices to taste-
canned chipotle pepper
cumin
ground chili pepper
salt
Instructions
Cook dry beans with a bay leaf and oregano for
1.5 or 2 hours. If you choose to add potatoes to your chili, add chopped potatoes about 15 minutes before beans are finished. Chop all veggies while you're waiting. Saute onion, garlic, sweet pepper and any hard veggies with ground meat in saute pan. Throw in some red wine if you're already drinking.
When beans are finished, drain most of water (set aside just in case more liquid is needed), add all ingredients and spices to taste. Heat through and serve with homemade cornbread. Tastes better the next day, but doesn't everything?
Omit meat for a vegetarian version
