Remove rib and stem from kale. Cut kale into 1 1/2 inch pieces.
Put the kale into a bowl and drizzle EVOO. Make sure all of the kale is coated with EVOO.
Lay kale on baking sheet and sprinkle with seasoning of choice to taste. Bake for 10 minutes, turn leaves and bake for another 10-12 minutes until crisp.
