Prepare brown rice. Meanwhile, prepare dressing by whisking together 1 T sesame oil and 2 T liquid aminos or soy sauce. Set aside until ready
Once rice is cooked, add 1 T sesame oil to large non-stick skillet on medium high heat. Add rice to skilled and 'fry' stirring often for about 5 minutes.
Add the diced carrots, edamame and stir to combine. After a few minutes add the sesame-soy mixture. Push the rice mixture to the side and crack the egg. Break the yoke and scramble quickly. Stir into rice and season with salt if needed.
