Add 2 cups of rice or you can half the recipe for a smaller amount to a pot and fry in a bit of olive oil until you get a nutty aroma and see achange in the rice. Mix all the time otherwise it will burn. Take off heat for a few minutes and then add 2 to 2 and a half cups of water. Less is better,you can always add a bit at the end if the rice is not fully cooked. Cook on medium flame.

While rice is cooking, chop up all vegies that you like and stir fry them lightly with minimum oil( sesame or olive is good) in a wok or big frying pan. Add some soy sauce or if you are watching your salt, add a spice mix of your prefernece as a salt replacement.

WHen the rice has finished cooking, toss in the vegetables. The heat from the rice will soften the vegies a bit so dont over stir fry them. DElicious as a side dish or with yogurt on the top as a meal in itself!
