Cream butter and sugar; beat in egg yolk. Add flour. Form balls and roll in beaten egg white and chopped nuts.
Bake on greased cookie tin at 350 degrees for 7 minutes. Remove from oven and make a dent in the middle of each cookie with a thimble. Continue baking 12 to 15 minutes. Cool and add jelly to center.
We always make these at Christmas to add to our cookie trays for neighbors and friends. Of course, we eat some too!
