Serve in a metal cocktail glass. In center of
glass place some baby spinach, rim glass with 7
shrimp and a lemon crown. place ramekin in center
of glass on top of spinach. Do not make more than
4 orders on weekdays. Discard if older than four
days or have the slightest unpleasant odor. Poach
shrimp in salted boiling water with a bay leaf and
a squeezed lemon. Cook until water is almost still
boiling again and immediately submerge in ice
water. Leave in ice water no longer than ten
minutes and refrigerate immediately. If you use
all of raw shrimp be sure you bring more upstairs.
