1. Tear lettuce into bite sized pieces. Cut tops of green onions into slices. Drain water chestnuts. Mix together in a large serving bowl.
2. Crush the ramen noodles into small pieces. Melt the butter in a large frying pan. Add the noodles and cook them in the butteron medium heat until they just begin to brown stirring frequently. Add the sesame seeds. Continue to toast the noodles and seeds, stirring frequently, until they reach desired doneness. Remove from heat into a bowl to cool. Once cooled, they can be stored in an airtight container until ready to use.
3. Mix all dressing ingredients together and stir or shake well. Store in a container until ready to use.
4. When ready to serve the salad, pour dressing over top of the lettuce, spread toasted noodles over top of the lettuce and toss gently.
