Place steak in slow cooker. Top with onions. Mix next 6 ingredients. Pour over onions.
Cook on low 6-7 hours (or high 3-3.5 hours). Remove steak and tent with foil.
Strain juice into a saucepan. Mix corn starch with water and blend into juice. Bring to a boil and simmer for a couple of minutes until thickened. Use the juice as a gravy.
