2 firm apples (braeburn, fuji, gala) halved & cored
2 cups apple cider
1 1/2 tsp ground cinnamon
2 Tbsp olive oil
1/4 tsp each salt and pepper
Instructions
Preheat the oven to 450 degrees. Whisk together the cider and cinnamon in a saucepan, bring to a boil and reduce until if forms a saucy consistency - about 20 minutes. Set aside.
Rub the chicken and apples with olive oil to coat. Place them on a baking sheet, apples with cut side down. Bake for 10 minutes, then turn the apples to cut side up. Bake for another 10 minutes.
Sprinkle chicken with salt and pepper and squeezed lemon juice if desired. Serve hot with cider sauce.
