1. Prepare enchilada sauce mix according to package directions. Stir in jalapenos and oregano. Tear 4 pieces of heavy-duty foil 14 inches wide.

2. Place 1/2 cup cooked rice and 1 piece chicken in center of each piece of foil. Top each with 1/2cup sauce, then 2 tbsp cheese. Wrap tightly to seal completely.

|
3. Bake in preheated 400 degree oven 15 minutes until cheese is heated and sauce is bubbling.
