In large saucepan heat potato, onion, water, apple
juice on med-high heat to boiling. Reduce heat to
medium-low, cover and simmer 5 minutes.
Stir in remaining ingredients and heat to boiling.
Reduce heat to medium-low, cover and simmer 15
minutes until vegetables are tender. Stir occasionally.
