Grease and lightly flour two 9x1 1/2in round baking
pans or one 13x9x2in baking pan; set pans aside.
Stir together flour, baking powder, baking soda, and
salt; set aside.

In a large mixing bowl, beat the butter with an
electric mixer on medium to high speed for 30
seconds. Add sugar; beat until well combined. Add
eggs, on at a time, beating well after each
addition. Beat in chocolate and vanilla. Add dry
mixture and 1 1/4c water alternately to beaten
mixture, beating on low speed after each addition
just until combined. Pour batter into prepared
pans.

Bake in a 350 degF oven for 30 to 35 minutes or
until wooden toothpick comes out clean. Cool layer
cakes in pans on wire racks for 10 minutes. Remove
layer cakes from pans. Cool thoroughly on racks.
Or, place 13x9in cake pan on a wire rack; cool
thoroughly. Frost with desired frosting. Makes 12
servings.

CHOCOLATE CUPCAKES - Grease and lightly flour
thirty 2 1/2in muffin cups or line with paper bake
cups. Prepare cake as above. Fill each cup half
full. Bake in a 350 degF oven for 15 to 20 minutes
or till a wooden toothpick inserted in centre
comes out clean. Cool on a wire rack. Makes 30
cupcakes.
