Beat egg, potatoes, milk and oil with hand beater until smooth. Stir in baking mix, (batter will be lumpy and stiff. If batter is too stiff, stir in additional milk.) Drop by rounded Tablespoonfuls onto hot griddle. (Grease griddle if necessary) Bake over medium heat until golden brown, about 4 minutes on each side. Serve hot with syrup and grilled franks.
